I'm sure it was very healthy too :)I made quite a few changes though, in that I didn't add any ingredients and just used the natural sugar & juice from the watermelon to marinate the white of the watermelon. Then I cut the red "meat" of the watermelon up in thin strips as well and ate it with chopsticks! Delicious!"
BenThinking about it I definitely should have added the vinegar though, since I'm sure it probably helps make the white part more tender.
I'm sure to have watermelon many more times this summer though, so will make sure to do it proper next time!
